Plate cost is the sum of the ingredient costs on that plate. Food-cost percent is the plate cost divided by the menu price. The suggested menu price is the plate cost divided by the target percent. A plate that costs $1.80 at a 30% target is $6.00. At a $6.00 menu price the food cost is 30%.
